RAJMAH DAL(KIDNEY BEANS) AND RICE

  • 1 cup dried red kidney beans (rajma)
  • 1 large onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1-2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil or ghee
  • Fresh coriander leaves for garnish

Preparing the Rajma:

  1. Wash the dried red kidney beans (rajma) thoroughly under running water.
  2. Soak the rajma in enough water overnight or for at least 8 hours.
  3. Drain the soaked rajma and rinse it once again.

Cooking the Rajma:

  1. In a pressure cooker, add the soaked and drained rajma along with fresh water.
  2. Pressure cook the rajma until they are soft and well-cooked. This may take about 15-20 minutes on medium heat after the first whistle.
  3. Once cooked, set aside.

Making the Rajma Dal:

  1. Heat oil or ghee in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they become golden brown.
  4. Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
  5. Add chopped tomatoes and cook until they become soft and the oil starts to separate.
  6. Add red chili powder, turmeric powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
  7. Add the cooked rajma along with its water. Stir and bring the mixture to a boil.
  8. Lower the heat and let it simmer for about 15-20 minutes, allowing the flavors to meld.
  9. Mash some of the rajma with the back of a spoon to thicken the gravy.
  10. Sprinkle garam masala and mix well. Adjust salt and spices according to taste.

Garnishing:

  1. Garnish the Rajma Dal with fresh coriander leaves.
  2. Serve hot with steamed rice, jeera rice, or naan bread.
