Ingredients:
For Paneer:
- 250g paneer, cubed

- 2 tablespoons ghee or oil
- 1 cup onion, finely chopped
- 1 cup tomato, finely chopped
- 1/4 cup cashews, soaked in warm water
- 1/4 cup melon seeds, soaked in warm water
- 1/4 cup fresh cream
- 1/4 cup milk
- 1 teaspoon sugar
- 1 teaspoon garam masala
- 1/2 teaspoon cardamom powder
- Salt to taste
For Garnish:
- Fresh coriander leaves, chopped
- Slivered almonds or cashews
Instructions:
Paneer Preparation:
- Heat oil in a pan and add ginger-garlic paste. Sauté for a minute.
- Add paneer cubes, salt, red chili powder, and turmeric powder. Cook until the paneer cubes turn golden brown. Set aside.
Gravy Preparation:
- In a separate pan, heat ghee or oil. Add chopped onions and sauté until golden brown.
- Add chopped tomatoes and cook until they become soft and the oil starts separating.
- In a blender, combine soaked cashews, melon seeds, and the tomato-onion mixture. Blend into a smooth paste.
- Transfer the paste back to the pan, add fresh cream, milk, sugar, garam masala, cardamom powder, and salt. Mix well and cook for a few minutes until the gravy thickens.
Final Assembly:
- Add the cooked paneer cubes to the gravy. Mix gently to coat the paneer with the rich sauce.
- Cook for an additional 5-7 minutes on low heat, allowing the flavors to blend.
- Garnish with chopped coriander leaves and slivered almonds or cashews.
Serve Shahi Paneer hot with naan, roti, or rice.
