SHAHI PANEER

Shahi Paneer is a popular Indian dish made with paneer (Indian cottage cheese) in a rich and creamy tomato-based gravy. Here’s a simple recipe for making Shahi Paneer at home:

Ingredients:

For Paneer:

  1. 250g paneer, cubed
  2. 2 tablespoons oil
  3. 1 teaspoon ginger-garlic paste
  4. Salt to taste
  5. 1/2 teaspoon red chili powder
  6. 1/2 teaspoon turmeric powder

For Gravy:

  1. 2 tablespoons ghee or oil
  2. 1 cup onion, finely chopped
  3. 1 cup tomato, finely chopped
  4. 1/4 cup cashews, soaked in warm water
  5. 1/4 cup melon seeds, soaked in warm water
  6. 1/4 cup fresh cream
  7. 1/4 cup milk
  8. 1 teaspoon sugar
  9. 1 teaspoon garam masala
  10. 1/2 teaspoon cardamom powder
  11. Salt to taste

For Garnish:

  1. Fresh coriander leaves, chopped
  2. Slivered almonds or cashews

Instructions:

Paneer Preparation:

  1. Heat oil in a pan and add ginger-garlic paste. Sauté for a minute.
  2. Add paneer cubes, salt, red chili powder, and turmeric powder. Cook until the paneer cubes turn golden brown. Set aside.

Gravy Preparation:

  1. In a separate pan, heat ghee or oil. Add chopped onions and sauté until golden brown.
  2. Add chopped tomatoes and cook until they become soft and the oil starts separating.
  3. In a blender, combine soaked cashews, melon seeds, and the tomato-onion mixture. Blend into a smooth paste.
  4. Transfer the paste back to the pan, add fresh cream, milk, sugar, garam masala, cardamom powder, and salt. Mix well and cook for a few minutes until the gravy thickens.

Final Assembly:

  1. Add the cooked paneer cubes to the gravy. Mix gently to coat the paneer with the rich sauce.
  2. Cook for an additional 5-7 minutes on low heat, allowing the flavors to blend.
  3. Garnish with chopped coriander leaves and slivered almonds or cashews.

Serve Shahi Paneer hot with naan, roti, or rice.
